Mojo Fondue (My Version)


We would go to Melting Pot Madison | Fine Dining in Madison, WI as a special treat. Living in a camper… it’s not always feasible or an expensive treat.

Melting Pot has a broth called “Mojo” that is our favorite broth. We’ve been experimenting & came up with a version similar to Melting Pot. This recipe is close but not perfect.

Tips

  • We use the Presto Kitchen Kettle Ceramic Deep Fryer/Multi-Cooker because it can be used for soups, frying, fondue, etc and inexpensive. Living in a camper is always about multi use kitchen tools.
  • No fondue sticks… No worries… you can you use wood kabob skewers (multipurpose again). I recommend adding permanent marker color to the end of the sticks so folks can tell which stick was theirs.
  • Red potatoes and carrots take the longest to cook. Cut into 1 inch cubes and put in pot early to start the cooking process. For us, red potatoes take 15 to 20 minutes.
  • If adding a lot of food at once, let the pot come back to boil before adding more food.
  • Have everyone bring their smartphone and use the stopwatch feature to time the cooking.
  • Always…. have a separate dish for raw. No ruining the memory with food poisoning.
  • Different sizes and type of meat will take different time.
  • Recommend!! Cutting cooked meats on separate plate to verify timing and doneness.

Mojo Broth

  • 2 large bottles of Chicken Broth (I use Aldi chicken broth)
  • 1 1/2 cups orange juice (3 fresh squeezed or from bottle)
  • 1/4 cup lime juice (2 fresh squeezed or from bottle)
  • 1 teaspoon cumin
  • 1 Tablespoon jerk seasoning
  • 1/4 teaspoon to 1/2 ground black pepper
  • 1 Tablespoon minced garlic (fried, fresh or refrigerated garlic)
  • Set temperature to 250 F.

Dips

Melting pot has a Green Goddess and a Curry dipping sauce. Along with a couple sweet dips. We don’t make the sweet dips instead purchase LaChoy Sweet and Sour sauce and Great Value Thai Style Sweet Chili Sauce.

Mock Green Goddess Dip (modified for normal household ingredients)

  • 1/4 cup Milk
  • 4 ounces cream cheese
  • Place in bowl and heat for 1 to 4 minutes. Whisk after each batch until cream cheese melted and smooth.
  • Mix ingredients below to the bowl
  • 1/8 cup which is the same as 2 Tablespoons Sour Cream
  • 1 Tablespoon finely chopped onions or substitute 1 teaspoon onion powder
  • 1 Tablespoon fresh parsley or 1/2 tablespoon dried parsley
  • 1 Tablespoon fresh chives or 1 Tablespoon dried chives
  • Refrigerate until cold and serve.

Curry Dip

  • 2/3 cup plain Greek yogurt. (I buy the single serve container it’s a little less than 2/3 cup but works ok.)
  • 1/4 cup Mayonaise (do not use Miracle Whip. Miracle Whip flavor will mess up the recipe.)
  • Mix ingredients in bowl. Then add below and mix.
  • 1/4 teaspoon dried Cayenne Pepper
  • 1 1/2 teaspoon curry powder
  • 1/2 teaspoon dried garlic powder
  • Refrigerate until cold and serve

Foods to cook in Broth cut into 1 to 2 inch pieces

  • Chicken (cook @ 3 minutes)
  • Steak (cook 2 to 3 minutes)
  • Potstickers (cook @ 3 minutes)
  • Red Potatoes (cook 15 to 20 minutes)
  • Carrots (cook 15 to 20 minutes)
  • Mushrooms (cook 10 to 20 minutes pending on how soft you’d like them)
  • Broccoli (cook 5 to 10 minutes)
  • Asparagus (3 to 4 inch pieces – Cook 10 minutes)
  • Additional options – Shrimp, Salmon, Duck, little wieners

Fondue Setup
Fondue Setup. Key – notice the ladle on the right – this is a great rescue spoon for lost skewer meat and removing vegetables that are dropped in to broth vs. place on a skewer.
