John and I like watching The Great British Baking Show. We like that we learn new techniques about baking. The not so fun part is the food urges resulting from looking at the awesome food. We also started a list of all the food we would like to try making.
We decided that our New Year celebration would be making something from the list. We considered 3 things: Brandy Snaps, Slice & Bake Cookies and Sausage Rolls.
The first we rewatched the sausage roll episode to decide on a recipe.
Most of the slice and bake cookies are sugar cookies or shortbread. Both John and I will eat sugar cookies, but they aren’t our favorite. For instance, I like my sugar cookies frosted, which would defeat the purpose of a slice and bake cookie with a built in design. So, we decided on making chocolate chip cookies as the main dough base. John is writing a separate recipe on the slice and bake cookies.
The brandy snaps were then put on the back burner since 2 baking experiments would fill up 1 day. Three would be too many.
The sausage rolls had 4 main steps:
- Make the pastry dough
- Caramelize onions and apple mix
- Season the sausage and roll into long tubes
- Make the rolls and cook
This sounds fairly fast but in actually it takes quite a while. Each step required cooling. Once you include the cooling and prep time, the recipe takes about 4 to 5 hours from start to finish. The preparation time was around 1 hour.

I didn’t take pictures along with way but did at the last few steps. The pictures below were taken in the trailer. The rolls were cooked in our small toaster oven. I forgot to take a picture after cooking. The recipe called for scoring the rolls which I did not do.

John, Heather, and I liked how the sausage rolls tasted and would make them again. The recipe calls for 4 teaspoons of black pepper. Plus, black pepper sprinkled on top of the rolls. In the future, I would decrease the black pepper by at least 1 teaspoon. John and Heather were OK with the quantity of black pepper. For me, the black pepper was overpowering.
I did not take a selfie with the cookies so I am adding one that I took on Mom’s birthday.
