Kabob Marinade Recipe

Steak and veggies kabob are one of those nice to make meals on really hot day. All the cooking is outdoors which means the trailer does not heat up.

I’ve used this recipe to make steak kabobs for the family get together at Fort McCoy one year and everyone loved them.

Marinade Ingredients:

  • 1/4 cup oil
  • 1/4 cup soy sauce
  • 1 TBSP Vinegar
  • 1/2 teaspoon onion powder or 1/2 finely sliced onion
  • 1/2 teaspoon mustard powder (Optional)
  • 1/2 teaspoon garlic powder. You can use minced garlic if you don’t have garlic powder

Marinading Instruction:

  • I marinade the meat separate from the vegetables. I also marinade the mushrooms in their own bag because if they marinade too long the mushrooms mushy and over seasoned.
  • Use 3 quart zip lock bags and fill each with the ingredients above. Each bag will need the full batch of ingredients.
  • Bag #1 – Cut and wash the 1 peppers & 1 onion into 1 to 2 inch pieces and place in bag. I use red onions but any sweet onions will work.
  • Bag #2 – Cut the steak into 1 1/2 to 2 inch pieces. Remove any silver skin. The fat can be left on. I use either ribeye or strip steak.
  • Bag #3 – Clean the mushrooms and remove the stems. Do not place in the bag immediately. Place them in bag about 1 hour before putting on stick for cooking.
  • Marinade Bag 1 veggies and bag 2 meat for at least 6 to 8 hours. Do not marinade over 12 hours. The bags should be stored in the refrigerator while marinading.
  • Marinade Bag 3 mushrooms for 1 hours no more than 2 hours. They will soak up too much marinade.

Cooking instructions:

  • Add the meat, vegetables and mushrooms to skewers
  • Often I like to cook the vegetables and mushrooms longer. Sometimes, I will cook them on a separate skewer or in small metal pan.
  • Every grill cooks different and I have a cheap camp propane grill. So, I recommend cooking the meat to your preferred temperature. The vegetables and mushrooms might need to be added back to grill until they are cooked and have some color.
  • On my grill, I cook the kabobs for 7 to 10 minutes and then turn for another 6 to 10 minutes. My meat tends to come on the medium well or well done. I have not perfected the art of medium rare steaks.
